Spring Cleaning Challenge – Breakfast, Lunch, Dinner, and Snack Ideas

3 Breakfast Ideas:

For the cook- Greek yogurt with fresh berries and granola

For the simple eater – Oatmeal with peanut butter and banana

For the restaurateur- Breakfast taco with eggs and sautéed veggies (mushroom, tomato, spinach)


3 Lunch Ideas:

For the cook- Butternut Squash and Spelt Salad with Goat Cheese and Toasted Almonds on top of a bed of greens

For the simple eater- Turkey Sandwich topped with spinach, tomato and onion and a side of sliced red & green bell pepper with salsa

For the restaurateur- Your favorite giant salad. Careful not to add too many fats – try choosing cheese OR avocado OR nuts, etc. You can also recreate these at home.


3 Snack Ideas:

Celery with peanut butter and raisins

Snow peas with hummus

Yogurt with fresh berries

For the cook – Cheeseburger Salad

For the simple eater – Baked chicken, rice and broccoli with red pepper flakes

For the restraunteur – At a Mexican restaurant, order fajitas with double veggies
